Chicken Liver Pate Served with Warm Papaya Salsa
Ingredients
Chicken Liver Pate
- 400 gms chicken liver
- salt and black pepper
- 75 gms. Butter
- 1 crushed clove of garlic
- 1 dl. sweet vermouth
- salt and white pepper
Papaya Salsa
- 1/4 of a paw paw chopped
- 1 bunch chopped parsley
- 2 hot chilies chopped
- 3 fresh tomatoes chopped
- 1 fresh cucumber chopped
- 2 green limes chopped
- honey, red vinegar, olive oil
Method
- Fry the chicken liver, but make sure it remains pink inside. Add salt pepper and sweet vermouth. Blend the fried chicken liver with butter and chopped garlic in the food processor. Put the mixture in the bowl or terrine and leave it covered in the refrigerator for overnight if possible.
- Mix all the ingredients together add then add olive oil, vinegar, and honey.
- Warm the salsa when serving.
