Garlic Prawns (Kamba wa Vitunguu Thomu)
Serves 6-8 people.
Ingredients
- a little bit of sugar
- 1 teaspoonful fresh garlic paste
- 1/2 teaspoonful fresh ginger paste
- 1 teaspoonful black pepper
- salt to taste
- 1 teaspoonful soy sauce
- 1/2 cup corn flour
- 3 small eggs
- oil for frying
- 2 finely chopped onions
- 1 finely chopped green chilli
- 2 teaspoonful tomato sauce
- 1 teaspoonful vinegar
- 1 teaspoonful sugar
- chopped spring onions & Corinder to garnish
Method
Marinade the prawns in the garlic, ginger, pepper, salt and soy sauce for an hour. Beat eggs and add cornflour, a pinch of salt and pepper and make a smooth batter. Dip the prawns in the batter then deep fry and put aside. Saute the chopped onions in 2 tablespoonful of oil. Add 1/2 teaspoonful of garlic and the green chilli and cook for 2 minutes. Add tomato sauce, vinegar and sugar, mixing well and adjusting seasoning. Add fried prawns and also add a few drops of water if necessary and allow to simmer for 5 minutes.
Garnish with spring onions and corinder.
Serve with coconut rice.
