Ingredients
- 2 Cups Red Onion -- diced
- 1/2 Red Vinegar
- 3/4 kg. Light Brown Sugar or honey
- salt and pepper
- 2 pcs. tomatoes diced
- 1 pc. hot chilly diced
- 1 Teaspoon Curry Powder
- 1 dl. olive oil
- 2 pcs. ripe Pemba Mangoes diced
Method
- Place red onion, vinegar and brown sugar in a stainless pot and bring to a simmer.
- Cook for about 30 minutes.
- Add tomatoes, chillies and curry powder and cook for a further 20 minutes (or until syrupy).
- Remove from heat and add Mango.
Serve with you grilled prawns
