Benn's Fruit Salad

This recipe is a tribute to Pemba Island, the island of my childhood, and the island which taught me how to depend on myself, by cooking my own food, when I was in Primary school and secondary in Fidel Castro. Pemba is a 'Paradise of fresh fruits, and jungle spices'.

You can get anything you want as far as fruits and vegetables are concerned. Spices, like ginger, green peppers, cloves, hahaaha, this is their home.

Ingredients
  • 3 fresh cloves
  • 1 cup sugar
  • 2 cups water
  • Fruits:
    • Paw paw
    • Pine apple
    • Mango
    • Jackfruit
    • cucumber (take out the seeds)
    • water melone (take out the seeds)
    • Sweet bananas (small ones are prefarable)
Method
  • Boil the water and sugar together, until it is half of the liquid. In short it has to become light clove syrup. Take out the cloves and throw them away. Leave the light syrup to cool in the refrigrator.
  • Cut your fruits in small cubes and put them in the cold clove syrup. Leave the fruit salad to be cold enough before you serve it.
  • You can serve this fruit salad with vanilla ice cream or whipped cream on the top.
