Benn's Tropical Fruit Cake
Ingredients
- 100 gms. butter
- 250 gms sugar
- 4 eggs
- 150 gms. dried tropical fruits ( mangoes, pine apples,bananas,pawpaw) cut in small pieces.
- 250 gms. boiled cold pressed potatoes.
Method
- Mix the softened butter and sugar untile white and fluffy.
- Add the agg yolks, one at a time, and mix thoroughly.
- Then mix in the dried fruits and potatoes.
- Beat the egg white untill stiff, fold them into the mixture with care.
- Pour into a well greased and bread crumbed baking tin, 20-22 cm in diameter.
- Bake for about 50 minutes at 175 degrees Centigrade.
- Let the cake rest for a while in the tin.
- It is important that it should be intact and handsome when it is turned out.
