Zanzibar Banana Gratin

Fried Banana
  • 4 green bananas
  • 5 spoons cooking oil
  • salt, powdered Spanish red paprika
Tomato Concasse
  • 3 tomatoes
  • 1 chopped onions
  • 2 cloves chopped garlic
  • 3 spoons concentrated tomato paste
  • 1 dl. white wine
  • 2 leaves chopped basilica
  • 1 dl. olive oil
  • 3 big spoons grated emmental cheese
Method
  • After peeling the bananas, bisect them in the middle, spice them and crispy-fry the bananas until golden brown.
  • Sauté the onions, garlic, and crushed tomatoes, mix the paste and the spices. Simmer the concasse and leave it until it is thick.
  • Arrange the bananas on the plate; pour the concasee on the bananas and the grated cheese on the top.
  • Bake it under the salamander until golden brown cheese is formed. Garnish with a leaf of basil on the top.
