Zanzibar Banana Gratin
Fried Banana
- 4 green bananas
- 5 spoons cooking oil
- salt, powdered Spanish red paprika
Tomato Concasse
- 3 tomatoes
- 1 chopped onions
- 2 cloves chopped garlic
- 3 spoons concentrated tomato paste
- 1 dl. white wine
- 2 leaves chopped basilica
- 1 dl. olive oil
- 3 big spoons grated emmental cheese
Method
- After peeling the bananas, bisect them in the middle, spice them and crispy-fry the bananas until golden brown.
- Sauté the onions, garlic, and crushed tomatoes, mix the paste and the spices. Simmer the concasse and leave it until it is thick.
- Arrange the bananas on the plate; pour the concasee on the bananas and the grated cheese on the top.
- Bake it under the salamander until golden brown cheese is formed. Garnish with a leaf of basil on the top.
