Zanzibar Fried Burns (Maandazi)
Ingredients
- 4 cups flour
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1 tablespoon active dry yeast
- 1 teaspoon cardamom
- 1 1/2 cup coconut milk
- 1 tablespoons vegetable oil/ghee
Method
- Combine dry ingredients in mixing bowl.
- Pour coconut milk into center of flour mixture and mix thoroughly.
- Knead dough 8-10 minutes and adding vegetable oil during kneading.
- Divide into 6 large balls. Roll each ball out into circles.
- Cut each circle into 4 triangles and keep in dry place to rise up.
- Deep fry until brown.
Notes: Maandazis taste best when they are warm. They are served on any occasion
