Mchuzi wa Kima (Minced Meat Stew)
Perhaps the name of this stew is a little bit extraordinary. I sometimes think why it is termed like that but I have got the answer until now. But is one of my favorite dish in the Ramdhan buffet.
Ingredients
- 4 tablespoons ghee
- 2 small red onions, finely chopped
- 5 potatoes finely chopped in cubes
- 1 bay leaf
- 3/4 kg. ground beef
- 1 tin tomato puree
- 1/2 cup beef stock
- 1/2 tea spoon curry powder
- salt and pepper
- pinch nutmeg , cloves and ginger
- 3 cloves chopped garlic
- 1 teaspoon lime juice
- 1 tea spoon red vinagre
- a pinch of cinnamon and cardamon
Method
- In a large pot melt butter and gently saute chopped onions , potatoes, and bay leaf for 8 to 10 minutes. Add ground beef, increase the heat slightly and cook until golden brown.
- Taste for salt before seasoning. Add nutmeg tomato puree and half the stock or cube maggi ( with cup of water ) and simmer over a low heat, covered for 1 1/2 hours.
- Stir from time to time and add remaining stock while adding the remaing of the spices.
- End the seasoning by adding red vinagre, whole chillies and lime juice.
Serve this lovely dish with Zanzibar pancakes (mikate ya maji).
