Zanzibar Sesame Bread (Mkate wa Ufuta)

In English we can call it Sesame bread is round, flat, different from unleavend bread ( Mkate wa kusukuma ) . They are very popular especially among the Coastal Swahili people in the month of Ramadhan .

Ingredients
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon salt
  • 1 cup hot boiled heavy coconut cream
  • 1 cup cold water
  • 1 teaspoon cardamom
  • 25 g fresh yeast or powdered (two packets)
  • Salt water if you are grilling on the lava grill or coal grill
  • Sesame
Method

Mix salt and yeast in a bowl until the yeast is melted. Slowly mix in cold water and then add the flour. Mix in the heavy boiled coconut cream. Beat the dough heavily and strongly for a few minutes, adding a few spoonfuls of dry flour if needed until you see that the dough is prose and well mixed. Leave the dough to yeast and rise at least three hours.

Lightly grease (with cooking oil) if you are using oven and pre-heat a or griddle a little add a little bit of sesame and then bake the bread in the oven until brown colour.

For those who have picnic lava stone grill using gas, use salt water on the pan and and pre heat first before you add sesame and grill on the surface side of the bread.

Use Ghee to moist the bread after taking out from the pan.

Serve the bread hot.
