Grilled Zanzibar Queen Prawns
Ingredients
- 1/2 teaspoon fresh lime zest
- 1/4-1/2 teaspoon cummin
- 1/2 teaspoon oregano
- 1/2-1 teaspoon salt
- 1/2 teaspoon Zanzibar fresh green pepper corns
- 2 tablespoons olive oil
- 3 tablespoons lime juice
- 3 fresh cloves garlic ( mashed )
- 1 Kg, shelled deveined uncooked Zanzibar queen prawns
Method
Marination
- Mix all those ingredients together and marinate the queen prawns.
- Leave the prawns in the refrigrator until you start grilling.
The Art of Grilling
- The charcoal should not be too hot when you start grilling
- The best grill is gas grill which use Lava stones, because you can regulate the heat.
- When you start grilling very slowly the shells of the prawns will start changing the colour, and then you can increase the temprature of the grill.
- In the process of grilling remember to brush the prawns with the marinade.
