Swahili Roasted Beef

This is a delicious spicy roast beef, which I prepared in Hotel S. Jacque Paris, when I had the East African Gastronomy Fair 1994.

 

Ingredients
  • 4 cloves garlic ( minced )
  • 1 tea spoon minced fresh ginger
  • 2 to 3 kgs. piece of steak
  • 2 dl. Fresh lime juice
  • 3 dl. Red vinagre
  • 50 gms. Peeled almonds
  • 5 - 4 cooking oil
  • 1 kg. Fine sliced red onions
  • 1/2 tea spoon cardamon
  • 1/2 tea spoon grounded black pepper
  • 3 pcs. whole cinammon
  • 1 spoon pilau masala powder
  • 1/2 tea spoon cummin
  • 1 spoon salt

 

Method
  • Clean up the steak, by taking out all the white fat on the top.
  • Warm up the frying pan with the oil.
  • Fry the steak until it is golden brown in colour.
  • Take it out of the frying pan and spice it well. Place it on the aluminium foil and put the rest of the spices in it together with the onions. Close it nicely.
  • Roast the steak in the oven for only 20 minutes in 250 to 360 degrees Centigrade.
  • Take it out, leave it to cool in the foil paper until when you want to serve it cold.

Slice it nicely and serve it with kachumbari or salsa.
