Groundnut Rusks
Ingredients
- 100 gms butter
- 85 gms sugar
- 2 eggs
- 210 gms flour
- 1 tea spoon baking powder
- 1 cup chopped fresh unblanched ground nuts
Method
- Cream the butter and sugar until fluffy, and the eggs one by one.
- Blend well so the mixture doesn't curdle.
- Add the flour mixed with the baking powder and the ground nuts.
- Place the mixture on a baking tray with greese proof pape, three lengths of 30 cm. each.
- Bake for about 10 minutes at 225 degrees centigrade.
- Cut the lengths first in halves, then diagonally in pieces 1 cm. wide. Separate them and dry them for about 30 mins. at 100 degrees Centigrade.
Serve them with nice Zanzibar coffee spiced with ginger.
